Chemically, allicin is known as 2-propene-1-sulfinothioc acid S-2-propenyl ester; thio-2-propene-1-sulfinic acid S-allyl ester.2.   Allicin is produced by an enzymatic reaction when the membrane of adjacent cells in the garlic plant are either crushed or somehow injured or attacked by microbes such as fungus or bacteria.  The enzyme allinase, stored in a separate compartment at the cellular level in raw garlic, combines with a compound called alliin and produces allicin.
